Genarally I play the songs in the original key because the director learns it that way. It's very rare that she teaches a song to the choir in a key other than the original version. There are some songs for my male choir that I learn in different keys due to the fact that the original key may be too high or too low. As far as hymns, I can play those in different keys (without the transpose button :D)

When I practice like I should, I learn a song in the original key, then 3 other keys going up by fourths for each key.  Usually moving a half-step or whole-step is not that difficult when playing, but starting to play a song that is 2 or 3 steps up from the original key can be alot harder if you are unfamiliar with the progressions in whatever key other than the original.

I learn the song in the orginal key but sometimes I keep the progression in my head because I never know when someone will sing it in another key. Im still trying to get on track learning every song in every key. But thats why when I practice I practice progressions in every key.
Vision without action is just day dreaming. I miss practicing.

I start with the original key.  Once I get the pattern, I can pretty much play it in every key.  I'll still have to practice it in order to play it good as in the orginal key.
Real musicians play in every key!!!

Once I learn the song in the original key, I can play it in any other key. ;)
