Key changing or 'Shifting Gears'

Hello all,
I'm a newbie to the list, a guitar player, and active in a Gospel environment.  We play Southern Gospel and old Baptist hymns, mostly by ear.  In the 'ago' I've been involved in classical choral church music, children's (Sunday School)  music and folk-style Christian music.  I live in Southern Ontario, Canada where it is snowing right now! <sigh>
I have a question.
When I'm changing keys in a song, i.e., raising the pitch by a tone, I play the root-V7-VI7-II.  For example, to change from C to D  I would play: C-G7-A7-D.  I've heard this described as a French Ending.
I am wondering what devices you folks use for similar situations.
