G-Ab-C / F-G-Bb or Eb-G-Bb

What is the theory behind rootless chords

Primarily, you're just using the tri-tone of the 'root' note.

In Ab, the 7-3-6 is G, C, F. The tri-tones associated with G are FB; with C, EBb; and with F, AEb.

I do the last chord like:

G-Ab-C / F-G-Bb or Eb-G-Bb

What is this? If one is saying a 7-3-6 that chord starts with a G. I, being the beginner that I am, would be completely lost.  :-\

LOL

It's all good. It's just a variation of his 3rd chord. I just dropped the Eb out of both hands.
Remember, we're talking rootless chords, so that's why you see the G. It's played at about G3.

or if you dont want to go rootless --
7 - GDA/BbFAC, Bb
3 - CE/BbDbGb, G
6 - FCEb/AbCEbG
if you check the melody line in the chords above, C, Bb, Gb, G, G
there's another variation on that same melody line (beware - dissonant chords lol)
7 - GDA/BbFAC, Bb
3 - EbG/ABDGb
3 - EAb/BbCEbG
6 - FCEb/AbCEbG
