Breakfast Casserole

**  1.5  lbs of Maple Sausage (browned and drained)
**  6 eggs
**  1 cup of milk
**  1/2 cup of pancake mix
** 1 package of shredded mild cheddar (1/2 mix in casserole) other half put on top when done and let it melt

Mix all together and bake at 350 degrees for 45 minutes. People will lick their forks!

It is so good but you can substitute with turkey sausage and egg beaters. YUM!!

The pancake mix hold it all together. This will serve 10-15 people.

Thank u for the recipe...I made it for my family this morning..I just added fresh chopped spinach and chopped onions...I'm not a sausage person, but the tore it up! Thanks Redd!

My mother makes a similar dish, but she also puts ham in it and puts bread slices on the bottom.  She also mixes some sharp cheddar cheese in there.  Needless to say it does not last long.  She usually gets special requests to make it for others once they've had it.

Probably - Bisquick makes pancakes, too...

Here's a 'Lazy man's version' for 1 -

cooked bacon, sausage or ham
mushrooms, onions, other veggies - about 3/4-1 cup
1 pat butter
2 eggs
Salt, pepper or other seasoning
1-2 slices or about 1/4 cup grated cheese
1 spoon

Put veggies, meat and butter in a microwave-safe bowl. Nuke for 2-3 minutes. Stir.
Beat eggs, season to taste. Add to bowl and cook for about 2 minutes, stirring midway if desired. Sprinkle cheese on top, give it about 30 sec. more to melt on top.
Apply spoon and enjoy!
