For one, I'm a huge fan of starch. If it wasn't for this conviction, I could live the rest of my life on just starch and summer fruit. I would never have to touch a vegetable, and although I like meat on occasion, I could definitely do without it.
Secondly, I'm very finicky. Yesterday, I joined some co-workers for lunch (huge accomplishment, btw... yayyyy me!!!). I had meatloaf, mashed potatoes and collard greens. The greens were extremely mushy and chopped really small. I think they were canned and overcooked, which equates to GROSS. I ate one bite and threw the rest out.
Honestly, I could list a zillion reasons that I don't eat enough vegetables, but really what it all comes down to is failure to prepare. I could put some peas, salad, greens, broccoli, or cabbage in a tupperware container every day and bring it with me to work. The problem is, I don't do it... *shrug* I'll go to the cafeteria at work, and they'll have a veggie I don't eat, so I just skip the veggie for the day. I don't eat sandwiches often. On the rare occasion that I crave a sandwich, I don't like a bunch of stuff on it. It's either going to be salami, cheese, and mustard or egg salad (which I just got into a few weeks ago). I don't put lettuce and stuff on my sandwiches.
I'm just finicky and I don't like veggies in the first place.
