Using Acapella with A Gospel Choir...

Due to whatever reason (not important)
I have to teach choir songs alone now. I am a musician so this will be interesting.

Is there any good songs I can do that are acapella because they struggle with understanding the importance of singing their own part and not leaning on the music to cover their faults. I think it's a great idea to learn a song that features only their voice, but I don't know any acapella songs that we could actually sing in a service.

I think this makes sense. Can you guys help me?

For a Gospel choir, Acapella is great for special effects, to break up the middle of a song.

Another one I hear sometimes is the director calling on people or sections, saying "Altos", or pointing to them, having them do 'solos' on their parts...

Off the top of my head, two John P. Kee songs come to mind: "Lily in the Valley" and "I Believe".  I'm sure I'll think of more as the day goes on.

Sometimes I will rehearse songs a cappella even if we're going to be singing them with accompaniment.

A cappella choir singing is one of the most wonderful things there is.  If only I could get my choir to agree with me.  :)
