I'm thinking about taking a year off from playing keyboard and re-learning Drums. I can no longer hide the fact that I'm a drummer at heart. I want to get back on them SO bad. I start salivating every time I see a pretty kit.

I'm thinking about taking a year off from playing keyboard and re-learning Drums. I can no longer hide the fact that I'm a drummer at heart. I want to get back on them SO bad. I start salivating every time I see a pretty kit.

I'm in the same boat, sort of...Been playing bass for a long time, but I always wanted to play guitar.  My father played guitar, and I think that's the reason I'm so intrigued because I never saw/heard him play.

It's a reverse transition (seems that in most cases, people had started with guitar and moved to bass for a variety of reasons), but you're already halfway there.

The secret to good curry is to burn your curry first and cook your goat super slow. Its really hard to mess it up if you do those two things.

OK, y'all....don't nobody really care ('cept, of course for me and maybe one other person on LGM) , but the conclusion of Norfolk Southern's heritage unit program is in sight.  Today, the Penn Central with its "mating worms" is back in the form of Norfolk Southern SD70ACe #1073 seen here at the Progress Rail facility in Muncie, IN.



The PC was the result of a desperate merger between the iconic Pennsylvania and New York Central railroads in 1968 (the much smaller New Haven, Hartford & Connecticut joined the mess later).  Two years later, Penn Central's bankruptcy was the largest ever in US corporate history at that time.  Penn 'Central exited the railroad business in 1976 when its rail assets and operations were taken over by the Consolidated Rail Corporation which is now part of Norfolk Southern.  Penn Central continued on in other non-rail business  ventures (although they did own a few miles of railroad rights-of-way) and eventually changed its name to American Premier Underwriters in 1994.  Among of of PC's non-rail holdings is Madison Square Gardens.

To burn the curry, you're going to put about 2 tbsp of cooking oil in the pan, and 2 tbsp of your curry. Stir it and cook it on med-high heat until it turns dark brown. Then add your seasonings/vegetables and cook for a couple of minutes. Then add your goat and stir it into the curry really good, then simmer it for about 10 minutes (med-low heat). Then you're going to add the rest of your curry, water, dry seasonings. Put a lid on and simmer it super low until it's extremely tender - like 30-45 minutes or so. Keep watch on it because if the flame isn't low enough, you'll burn out all your stew.

And if you're cooking white potatoes or yam with it, make sure you taste it toward the end because you'll probably need to add more salt.

You know what? I thought that's what you meant, and I just saw that on some website.

I'm convinced that the recipe I used was wrong.  That's what I get for using the very first link I came across instead of doing research (in my excitement to try a new dish).

Anyway, my next door neighbor just blessed me with some goat so that I can give it another shot some time this week (probably Friday).

You're quite welcome.

The key really is to burn the curry and cook it slowly. Other than that, you can't really mess it up (unless you make it too salty or not seasoned enough - but even those can be fixed. If it's too salty, add another potato and cook on low until the potato is done. If it's not seasoned enough - just add a pinch of white salt repeatedly until it's good). Make sure you use some thyme.

Why the sad eyes and wherefore is thine countenance fallen down?  Be of good cheer; for the the Heritage painted diesels of the Norfolk Southern Railway shall ride the rails for years to come.  And if you happen to be in the Spencer, NC area on July 3rd and 4th, you'll have the opportunity to photograph all 20 of the heritage units for yourself; live and in living color (or in B&W if you are so inclined) at he North Carolina Museum of Transportation!  Otherwise, we can hope that CSX will also run a series of heritage units of its own.  Short of that, I've got lots and lots of information on the Chessie System I can share with you...assuming that you care of course  ;).
