Question, why is an inexperienced soundperson dictating how the PA setup should be? And why is he/she being allowed to?
because obviously some of these churches ( including a former church I played and served at ) allow this " Bafoonery and foolishness to go on, however the reason that we went to this was because we were told that the "Senior people and elders of the church were complaining that the music was too loud and it sounded like a club.... >:( Now mind you ( alledgely) these are folk who are in thier late 60's/70's making a " Dance Club/ musical reference  ?/?....... all I could say was wow  :-\

I can understand the 'loudness' thing but an experienced soundperson would know how to balance out a system. The musicians themselves need to learn to play 'quietly'. Me personally, I don't like it loud either! One of the main reasons I stopped going to the clubs while in my early 20's! I just don't understand the need for insane volume levels!!

On the other hand, elders have been known to resist modern music and church ways.

Lastly, having an inexperienced "soundperson" dictating to musicians is the last thing a church needs. It should be a joyful experience. When it's not, everyone suffers!

I've been in this situation before where the church had a sound system with a sub, and it still sounded like garbage.  The sad reality is you need a bass-friendly engineer on the board in order to either get them to leave the eq flat or adjust it to something that a bass player would like.  I'm currently playing at another large church that doesn't have subs.  I was experiencing the same problem using headphones. Last Sunday I brought my tubed head with me ran through that.  The tubes brightened and fattened up the sound really well with my MTD.  Now it sounds great in the house and the headphones, even when I do percussive stuff.
