I need help playing quartet style piano!

Hey everybody. I have always struggled with playing songs that somewhat have a quartet feel.

Here are a couple of examples of what I mean. I just found these on youtube browsing.

Any help is greatly appreciated. Like should I bounce between the 3&1, the 4&1, play with the blues scale, play some minor chords?
I don't know why these types of songs kick my butt. They are kind of like congregational songs where they are all similar.

Someone please help me! LOL
