I LOOOOVVVEEE to pedal. Like you already said, I picked that up from playing jazz. When I'm playing with my gospel musician friends and I start to pedal (usually on organ, its hard to make it work if you're on the piano and there's a bass player) it always blows there minds. Then everybody's on me trying to find out what I'm doing  Ah one of the many perks of playing other forms of music

This is an effect called upon in classical (pipe) organ as well except we call it the pedal point or pedal tone. I use it most effectively during the last verse of a hymn. For instance, if the hymn is in F, I will hold a low C (the 5th) in the pedal for the entire stanza and return to the tonic for the final chord. It certainly works quite well in that instance.

One way to change songs up what be to use what we jazz musicians call pedaling. It is where you keep the same bass note for more than one chord. It's an interesting effect. You can even repeat a bass line for a whole verse of a song.
For example,
C Major
CG/BDEG - Victory is
.
What would you hold down a "C" through the hold song? Sorry, I don't understand.
