Exactly what are gospel turnarounds? And when and how are they used?

I would say a gospel turnaround by definition is a combination or sequence of chords that are used to get back to a certain point in a song usually the beginning.

Ohh yeah I forgot. A turnaround can also be a combination or a sequence of single notes. :) :) :)

A 3-6-2-5-1 progression is a very common turnaround in gospel or wherever.
