What are your plans for the studio and how space do you have? This will determine how much equipment you will need

Of course, since you have a Mac I recommend using Digital Performer or ProTools to do your mixing/recording with.

Is Stienberg Cubase le a good program

It's hard to say if a program is "good" or not-
A lot is up to the personal preference of the guy using the program... but yeah, Cubase LE can do a decent amount of work, but you might want to consider upgrading/switching at some point in the future. A free DAW program called Audacity (for both Mac & PC) is available out there on the internet. I highly recommend it, only because of all it's features while still being 100% free. But for Macs I like Motu's Digital Performer, Digidesign's Pro Tools, Ableton Live, Logic Pro, Mackie's Tracktion 2 and Cubase...
Cubase SE- good place to start. For your needs, it should provide enough power and features.
Just my opinion.
