Title: Breakfast Casserole

**  1.5  lbs of Maple Sausage (browned and drained)
**  6 eggs
**  1 cup of milk
**  1/2 cup of pancake mix
** 1 package of shredded mild cheddar (1/2 mix in casserole) other half put on top when done and let it melt

Mix all together and bake at 350 degrees for 45 minutes. People will lick their forks!

Thank u for the recipe...I made it for my family this morning..I just added fresh chopped spinach and chopped onions...I'm not a sausage person, but the tore it up! Thanks Redd!

My mother makes a similar dish, but she also puts ham in it and puts bread slices on the bottom.  She also mixes some sharp cheddar cheese in there.  Needless to say it does not last long.  She usually gets special requests to make it for others once they've had it.

Probably - Bisquick makes pancakes, too...

Here's a 'Lazy man's version' for 1 -

cooked bacon, sausage or ham
mushrooms, onions, other veggies - about 3/4-1 cup
1 pat butter
2 eggs
Salt, pepper or other seasoning
1-2 slices or about 1/4 cup grated cheese
1 spoon

Put veggies, meat and butter in a microwave-safe bowl. Nuke for 2-3 minutes. Stir.
Beat eggs, season to taste. Add to bowl and cook for about 2 minutes, stirring midway if desired. Sprinkle cheese on top, give it about 30 sec. more to melt on top.
Apply spoon and enjoy!

What happened Booh! Was it solid? I might suggest adding more pancake mix or allowing more cooking time. It should be light brown on top and fork should come out clean.

I had ham and green onion so I used them instead of sausage, but I want to do another with sausage.

I agree, it does sound similar to one of my quiche recipes.

Got mine in the oven now. I substituted the sausage for bacon. I'm a bacon lover, and just didn't want that sausage to over power the taste. I'll let you know when it is done. Me and Cat is going to dig in for lunch.  ;)

SisT, can you put a little in the microwave and let me know how that works out?  The only way I'll be able to do it is if I can make it Friday evening for Saturday breakfast, but I won't bother if it won't reheat well.  I can just save it for a holiday or something.

Don't line your bakeware with foil for easy clean-up if you wanna. I like to work smarter, not harder whenever possible. 8)

I put my in a square glass dish. It came out very clean. yes I had to wash the dish lol, but there wasn't a lot of scrubbing. It wasn't runny at all.

I think I might substitute the sweet sausage for bacon or ham or maybe even chicken breast next time. It's a pretty dish too. If I DO do sausage again, it will be italian sausage :)

I usually line my bakeware for easy clean up too. Larue, when it cools off I'll reheat it and see what happens.


Here's my outcome:

I should have followed my first mind and used a 9x9 pan instead of a 9x13 pan. It came out too thin. I rather it to be a little thicker. I used a non-stick pan, but also sprayed it with non-stick spray. As you can see with the pics below, it removed out of the pan leaving behind no mess. Also, because I had a thin batch, the bake time was only 25 minutes.

I used a pouind of back. It was yummy...but again, just too thin. Next time, for my family, I'll double the recipe and probably use 1 1/2 lb bacon....or I'll add a lil ham too.

Next time I'll use a smaller pan or a double batch....notice with the cooking spray, it came right out. Easy clean-up

I do line with foil, whenever appropriate (like when baking meat or country-style potatoes or something like that).  But, I can't imagine how an egg-based dish would come out when baked in an aluminum foil-lined dish.  :-\  Just seems weird, dude.

Oh, and I hate washing dishes.  I use non-stick bakeware or Pyrex dishes, for most of my baking.  Both are a breeze to clean.

Hmmm.  I was gonna use a deep, round Pyrex.  That looks good, though SisT.  And I see what you mean about it being too thin.  I definitely pictured it thicker, too.

So, I just got finished making this WONDERFUL dish.


My wife enjoyed it (which says a lot as she can be finicky at times).  ::) :D

I made the casserole Saturday.  I used 1 lb. of maple-flavored sausage and about 7 slices of crisp bacon. 

The boys and I agree the casserole is off da chain and the boys considered the recipe a "keeper"! :) :)

Sis, I'm tryna tell ya, the dish. IS. bangin'.  8)


Plus, it's one of those dishes that can be a variation on a theme. Cheese, no cheese; add peppers/onions; use ANY kind of meat or no meat at all (my wife's idea); add spices if one desires. There are just SO many possibilities to this dish.


The next time I do it, I'm going to use mozzarella cheese.  ;)

The dish is DEFINITELY a winner!


For me, it was more eggy than 'pancakey'. AND, it reheats well, IMHO.  8)

Been thinking about adding onions and peppers myself (even though I don't add those things often).
